History
The origins of cocoa lie in Central America, in the territories of today's Mexico, Guatemala and Honduras where the Aztecs and Mayas lived. As early as the fourth century A.D., the ancestors of the Aztecs and the Mayans already cultivated cocoa. Made from ground cocoa, seasoned with chili, vanilla and honey, the Aztecs prepared a real power drink, the "Xocolati", while cocoa butter was used as medicine or cosmetics.
 
Composition
While every chocolate is made of cocoa mass, cocoa butter and sugar, there are big differences depending on the different types of chocolate. In dark chocolate, the cocoa content can reach 70% or more. Milk chocolate contains about 25% cocoa and additionally milk or cream powder. White chocolate consists of cocoa butter and sugar, but no cocoa mass is included.
 
Selection
Chocolate comes in a broad range of varieties and qualities, of shapes and flavors. There is bitter chocolate (to Germans also known as "Herren Chocolate"), milk chocolate and white chocolate. Chocolate coating used for baking and glazing with a higher fat content is called "couverture". More sophisticated chocolates such as praline fillings are more expensive, yet more delicate due to the longer and more complex process of preparation. Other kind of chocolates can be blended with aromas and spices such as chili, cinnamon, black pepper or even thyme. "Airy chocolate" is a special type which contains numerous small gas bubbles.
